318 Restaurant Week returns, March 18-23, 2019, with 50 participating restaurants and 10 special, one-night-only dining experiences. One of those experiences will be a Brazilian Steak Night prepared by Executive Chef Wesley Douglas and his team at The Petroleum Club in downtown Shreveport, 6-9 p.m., Tuesday, March 19. The evening will include a Brazilian-style steak service featuring grilled sausage, chicken, beef filet, and tri-tip (sirloin) served table-side from a skewer using what Douglas describes simply as “a big machete.” There’ll also be traditional Brazilian sauces, breads and desserts.

During a Brazilian-style steak service, each table displays a sort of button or badge that is red on one side and green on the other. When you’d like more meat, you display the green side and a server brings you more meat. If you feel yourself developing “the meat sweats,” you display the red side and no one will offer you more meat until the green side is displayed again. Chimichurri, pico de gallo and farofa (toasted cassava flour) will be available on each table, along with Brazilian-style tapioca flour bread with Parmesan. That bread is one of Douglas’s favorite parts of the night.
“It’s light and airy, and it’s really made to soak up the juices from the meat,” Douglas said.
Douglas picked up more than a love of steak during his three-year stint as a chef in Rio de Janeiro; he also met and married his wife there. His wife, in fact, may be helping make the traditional brigadeiro candies – also known as Brazilian fudge balls – that’ll be served as dessert. There’ll also be a salad bar, charcuterie, roasted vegetables, a cheese display and assorted sides.
Only 75 tickets to Brazilian Steak Night at The Petroleum Club are available. Tickets are $65 each, inclusive of service charge and tax. A cash bar will be available. This event is open to members of The Petroleum Club as well as non-members.
