One of Shreveport-Bossier’s most renewed chefs, Niema DiGrazia, was recently featured at “Taste Louisiana,” a tasting event designed to bring exposure to Louisiana food culture, in New York City. Having created the Afro-fusion style of cooking, Chef Niema blends traditional Louisiana flavors with traditional African flavors, such as in her SierraLeone-Style Smoked Lamb Chops seasoned with Niema’s signature NimzoMatic spice blend, served over braised sweet potato leaves and broken basmati rice. An exclusive dish you can only get right here in Shreveport-Bossier at Abby Singer’s Bistro in downtown.

Ki’ Mexico is another local favorite, taking traditional Mexican flavors and blending them into delicious & unique dishes that align with modern foodie trends. Chef Eleazar Mondragon, a graduate of Le Cordon Bleu College of Culinary Arts in Austin, TX, started at the Shreveport Farmer’s Market selling salsa, and after selling out so fast, they started sharing traditional Mexican dishes to sample with the salsa, which eventually led to the opening of their restaurant. Now, visitors can savor their delicious Quesabrosa, which is melted cheese on a hot skillet with chorizo & roasted jalapeno rajas served with fresh homemade tortillas.

Located in Shreveport-Bossier’s Highland community, Fat Calf Brasserie is serving up French-inspired Southern cuisine. Chef Anthony Felan serves hearty entrees and a nice selection of spirits, such as the Steak & Pommes Rosti. A dish consisting of delightfully crispy potatoes, served with tender steak and drizzled with a special sauce. Their menu changes with the season to ensure the freshest ingredients. Their goal is to welcome guests into their neighborhood establishment with food that makes you feel right at home.

At Zuzul Coastal Cuisine, Chef Gabriel Balderas brings the vibrant essence of coastal Latin America to Shreveport. His menu showcases sustainably sourced seafood and meats, such as fresh Salmon salad, fresh ceviche, meats infused with bold Latin spices, and a variety of seafood. Often dishes are thoughtfully paired with seasonal cocktails and curated wines. Chef Balderas masterfully combines tradition with modern techniques, offering a dining experience that is both globally inspired and uniquely rooted in Shreveport-Bossier’s evolving culinary scene.

Along with international flavors, Chef Hardette Harris, one of Louisiana Cookin’s 2025 Chefs to Watch and a James Beard Semi-Finalist for Best Chef South, keeps us close to our roots with traditions and flavors specific to North Louisiana. At her restaurant, “Us Up North” – Celebrating North Louisiana Cuisine, she uses her passion to teach people how to infuse the flavors of our community into your dishes. So much so, that she created the Official Meal of Northern Louisiana, one of only two official state meals in the entire United States. With classic dishes like Greens & Cornbread, fried catfish, potato salad, and purple hull peas; this is seriously one North Louisiana chef whose story you must hear (and taste!) for yourself.

Another deeply rooted, North Louisiana favorite is the historic Orleandeuax’s Crosslake Cafe. Founded in 1921, Orlandeaux’s Crosslake Cafe is one of the oldest continuously operating Black-owned businesses in the U.S., known not only for its food but also for its role as a hub for civil rights discussions where Dr. Martin Luther King Jr. was in attendance. Chef Damien “Chappeaux” Chapman serves many authentic Creole & southern dishes using traditional family recipes, such as the Shreveport-Style Stuffed Shrimp. This is a large well-seasoned shrimp stuffed with crab meat, deep fried, then dipped in their classic creole tartar sauce. Chef Chapman is committed to making sure Orlandeaux’s remains a destination where visitors can experience Shreveport-Bossier’s rich culture and history.
